Why does raw milk look thicker on top?

Raw milk is not homogenized. Homogenization is a process that uses extreme pressure to break up the milkfats into small undetectable particles. Raw milk however is totally natural, unprocessed, and unadulterated; therefore:

  • That heavenly cream will all rise to the top. Just give it a good shake before pouring to incorporate it throughout.

  • The thick cream line on raw milk is seen as a sign of quality and naturalness. 

  • The cream and unaltered milkfat globules will tend to stick to the sides of the container.  This is a good thing! It's the natural rich fat content doing its thing and is a sign of minimally processed quality milk. 

 

When will raw milk be labeled and available for human consumption?
The Department of Agriculture published the finalized regulations in mid June and we recently received the extensive application packet and list of testing requirements. We anticipate the application period to take about a month. If all goes well, we hope to be permitted and selling by September! It's been a long journey. Thank  you for your patience and sticking with us. 

Do you test your milk?
Yes! We use our on-farm lab to measure bacterial counts using a Standard Plate Count (SPC). We also use it to test for coliforms. 

  • We test at least once a week.

  • We continually exceed the safety standards set for pasteurized milk in relationship to coliforms and SPC.

 

Do you test your cows?
Our cows’ health and comfort are top priorities.

  • Housed in our Cow Palace, they enjoy daily fresh shavings, tilled bedding, great ventilation, and access to sunlight.

  • Our cows' udders and teats undergo a multi-step cleaning process before the milkers are attached. 

  • Milk lines and equipment are sanitized before and after each milking.

  • Milk is rapidly chilled to below 40°F within one hour of milking.

  • We conduct routine herd checks with a local vet.

Do you use antibiotics?
Yes, but only when absolutely necessary to protect the animal’s health.

  • If a cow requires antibiotics, she is removed from the milking lineup.

  • We follow strict antibiotic and milk withdrawal protocols to ensure no treated milk enters the supply.

Milk Handling 

How should I handle and store raw milk?

  • Keep milk at or below 40°F at all times.

  • Use an insulated container during transport.

  • Don't let milk sit out on the counter for extended periods.

  • Store in the coldest part of your refrigerator (usually the back section and NOT in the door).

What is the shelf life of raw milk?
Properly handled, high-quality, rapidly chilled milk typically stays fresh for at least 14 days. We recently experimented with our milk, and it was still tasting fresh at 23 days!

Pickup will take place on Saturday mornings from 9 AM to 5 PM. Directions for pickup are included in the links above. Pick up dates and times will eventually expand as demand grows.
